I hope it's not too long before you have a gorgeous pointy nose in your home. Can't answer your question on allergy thing, but neither of my dogs have raised bowls (never stops them eating!!) and in my opinion, with a wee bit of encouragement your stairs should not be a problem. Greyhounds are amazingly resourceful when THEY want to be.

Hi there, Claire/Slimcilla - hope you get your greyhound soon! I've had my Piper since Easter (we already had a little lurcher) and now sing the praises of greys to everyone who will listen. I've always been told they need raised food bowls, but an upturned bucket will do just fine. Bonnie has her bowls on an old Mothercare footstool which used to be the children's loo step! I expect your hound will learn to master the steps to the garden. Piper didn't know any stairs when she arrived, but got the hang in no time when she realised that there were soft beds up there
Welcome to the forum, I enjoyed reading your introduction and I'm sure you won't have very long to wait for your new companion.
I can't comment on the allergy problem but with regards to feeding, we've always placed our (foster) greyhounds food bowl on a stall (I think the reason for doing so is to help prevent bloat!) With regards to the stairs - They work them out pretty quickly especially, as Anyanka says, if there's something nice at the top/bottom!

Nice to see I'm not the only one who would happily hang gas-masks at the door and not let a wee thing like allergies stop you getting a dog!
I've got one raised feeder and Tigger uses that quite happily. Wills eats off the floor (bowl is present) and Millie uses the bottom step of the stairs as her raised feeder. Reason: she doesn't like it when Tigger is scoffing her grub and making the stand wobble.
With regard to the open stairs - my three have no hesitation in going down the way and they don't seem unduly concerned about going up the way either although they do hesitate to have a look through the steps.
It was lovely to read your intro and you sound like you have had a long time to decide on a grey (20yrs!!!). I myself have had greys since 1987 and highly recommend a lovely grey companion.
My Mother has asthma and is allergic to most pet hair - cats included. I have had four dogs (some together during the 20 years) and only one affected her. He had more fluffy hair than the others but I am sure Dave and Glendy will know about different coat types.
My current chap uses a bucket its an addis one and the metal feed bowl is a perfect fit the right way up as well!
I am sure that the purrfect companion for your cats will come along soon and I think you really should not worry too much about stairs etc. I have found my dogs to be very adaptable during the years. As long as they have a comfortable bed on which to retreat, a short walk and a bowl of food or two a day they are very undemanding! Mine has to wriggle under a bar to get onto our favorite stretch of grass (it is to stop vehicles) and he accepts he needs to do this no problem!
